Journey to Optimal Health

I have always believed and touted that I get all the nutritional support from my food. That although I do eat ‘junk food’, have an occasional alcoholic beverage and love things deep fried, in general I’m healthy. I, for the most part, eat a relatively balanced diet of grains, vegetables, proteins and then the food pyramid changed. So I began relying on labels, but how many grams of proteins and sugars am I supposed to get and what does based on a 2,000 calorie diet really mean? 2,000 calories sounds like a lot but is it really? Then I heard the buzzword/accronym GMO, what is that? My milk is supposed to be rBST free, is it? Are my eggs supposed to be brown shell or white and what is the difference?

I started to do some research and learned that according to the USDA, we have a reliable declines in protein and calcium in our foods. “The average vegetable found in today’s supermarket is anywhere from 5-40% lower in minerals, proteins and vitamins compared to those harvested just 50 years ago.” Declining Fruit and Vegetable Nutrient Composition: What Is the Evidence? by Donald R. So, what is going on? Well, we are farming differently, we have industrialized agriculture,  we use pesticides, we have GMO’s which are genetically modified organisms, our soils are mineral and vitamin depleted. So what is the effect?  We have a much faster and bigger harvest than in years past. There is less time for nutrient absorption from synthesis and soil. In some instances the ingredients in fertilizers , such as potassium, nitrogen and phosphorus, can interfere with the absorption of nutrients.

We are also handling the produce differently, we pick fruits and vegetables green or under-ripe to withstand shipping and to extend shelf-life in warehouses and grocery stands. Not to mention that we block ethylene, a natural occurring hormone that causes plants to soften and ripen.

Is there a solution? Of course, there are many. First, be selective about the food you choose, organic produce generally have  higher levels of minerals than those grown with chemicals. Be choosey, find a grower that has been using organic methods for at least ten years. Second, perhaps not the easiest of choices is to grow your own. Finally and perhaps the easiest, is to take supplements.
